If you’re looking for one last meal to end your Hokkaido trip, there’s a ramen shop at New Chitose Airport you shouldn’t miss: Ebisoba Ichigen, famous for its rich shrimp broth.
Rich Shrimp Flavor: The One and Only Ebisoba Ichigen

Near the entrance of the Hokkaido Ramen Dojo on the third floor of the domestic terminal, this shop always has a long line.
It’s a must-visit for locals and tourists alike,

and the secret is the shrimp broth.
Instead of the usual tonkotsu or miso base, a deep, rich shrimp umami fills your mouth.

One sip of the broth tells you why Ebisoba Ichigen is called the airport’s specialty.
What to Know Before Ordering

At Ebisoba Ichigen, you order by combining a soup base with a flavor (tare).
There’s a fun element of choice hidden in every bowl.
1. Choose your soup
* Sonomama: the basic version, with the pure, rich aroma of shrimp.
* Hodohodo: a balanced mix of shrimp broth and some tonkotsu.
* Ajiwai: a richer mix with more tonkotsu for a heavier flavor.

Recommended combination:
The most popular order among Korean travelers is ebi miso with ajiwai.
The rich shrimp aroma blends with the umami of Sapporo miso ramen for a deep flavor.
If you prefer the clean taste of shrimp itself, ebi shio with sonomama is also great.
2. Choose your flavor (tare)
* Ebi miso: the signature, with miso added to shrimp broth for the deepest umami.
* Ebi shio: salt-seasoned to bring out the shrimp aroma cleanly.
* Ebi shoyu: a traditional soy sauce style, salty and rich.

The noodles are springy and straight, with a light sprinkle of red shrimp powder.
The moment you take a spoonful, the soft shrimp aroma and umami are unforgettable.

Location and Hours
* Location: Hokkaido Ramen Dojo, 3rd floor, domestic terminal, New Chitose Airport
* Hours: 09:00–21:00 (last order 20:30)
* Wait time: 30+ minutes on average, up to an hour at lunch and dinner peaks
Tip:
Lines are relatively short right after opening (9 a.m.) or between 3 and 4 p.m.
If you’re eating before a flight, allow at least an hour.
Long Line? Try Ajisai Instead

If the line at Ichigen is too long, Ajisai in the same Ramen Dojo is a good choice.
It’s an old Hakodate ramen shop with an 80-year history, and shio (salt) ramen is its signature.
The broth of kelp, pork and chicken bones with rock salt is clear and light.
Ajisai in one line:
the best alternative if you want a clean, light broth instead of rich shrimp.
If Ichigen is the peak of rich flavor, Ajisai is the textbook of clear flavor.
Both are on the airport’s third floor, so it’s easy to choose based on the wait.
If you want a special finish to your Hokkaido trip, Ebisoba Ichigen at New Chitose Airport is the answer.
Many people think little of an airport restaurant until the first bite surprises them.
The umami of rich shrimp broth melts away travel fatigue and leaves a lasting impression.
“The deep shrimp aroma in one spoonful of broth brought my travel memories back to life.”
A taste that makes you forget the long line, mixed with the excitement before a flight.
If time allows, complete your taste of Hokkaido with a bowl of Ebisoba Ichigen shrimp ramen.
If the wait feels like too much, Ajisai’s shio ramen is also a great clean ending.
